Weight Watchers Greek Lentil Soup recipe
Makes 8 servings

Components
2 cups dry lentils, rinsed
1 (10 ounce) package deal frozen chopped spinach, thawed
1 tablespoon olive oil
24 ounces beef inventory or broth
1 cup finely chopped carrot
6 cloves garlic, minced
1/2 cup chopped celery
1 1/2 cups chopped onions
1 (14 1/2 ounce) can diced tomatoes
8 cups water
1 1/2 teaspoons chopped contemporary oregano (or 1/2 tsp. dried)
1/2 teaspoon salt
1/2 teaspoon contemporary floor black pepper
1 1/2 teaspoons chopped mint (optionally available)


Preparation
1. In a big inventory pot, warmth the oil and saute the garlic, onions, celery and carrot till the greens are tender.
2. Add the rinsed lentils, water and beef inventory.
3. Deliver the combination to a boil, then scale back the warmth to a simmer, cowl and prepare dinner for about 45 minutes (or till the lentils are tender), stirring sometimes.
4. Add the tomatoes (with the juice within the can) and the chopped oregano, mint (if utilizing), salt and pepper.
5. Stir within the spinach and simmer uncovered for about 15-20 extra minutes.
